Asparagus produces
modestly – just 6 to 18 spears from each plant beginning late
April through mid-June each year. Fields are checked daily, and
at the right moment, the spears are cut by hand and shipped to
the nearby Hogue Farms cannery where they are inspected, washed,
cut to size, and blanched. Pickled Asparagus is an elegant
appetizer, a splendid addition to salads and pastas, garnish a
Bloody Mary, naturally fat free, and delicious.
